A family favourite at our house for well over a decade. Sure to impress with this one!

Ingredients

  • 1kg Lamb Roast, fat slightly trimmed
  • 500g Roasting Potatoes
  • 100g Blend 101 Little Bo Peep Blend
  • 50g Blend 101 Cluckin' Good Blend
  • 2 White Onions

Instructions

  1. Preheat oven to 200°C fan-forced. Lightly grease roasting pan
  2. Place lamb in pan.
  3. Rub lamb generously in Little Bo Peep Lamb rub and roast for 15mins at this temperature
  4. Halve potatoes and onions. Cover lightly with Cluckin' Good blend.
  5. Reduce oven temperature to 180°C/160°C fan-forced. Roast lamb, basting with pan juices every 20 minutes, for 1 hour 15 minutes for medium or until cooked to your liking. Add potatoes to pan for last 40 minutes, turning halfway through cooking.
  6. Remove lamb from oven. Cover loosely with foil. Stand for 10 minutes. Carve. Serve with potatoes
