A family favourite at our house for well over a decade. Sure to impress with this one!
Ingredients
- 1kg Lamb Roast, fat slightly trimmed
- 500g Roasting Potatoes
- 100g Blend 101 Little Bo Peep Blend
- 50g Blend 101 Cluckin' Good Blend
- 2 White Onions
Instructions
- Preheat oven to 200°C fan-forced. Lightly grease roasting pan
- Place lamb in pan.
- Rub lamb generously in Little Bo Peep Lamb rub and roast for 15mins at this temperature
- Halve potatoes and onions. Cover lightly with Cluckin' Good blend.
- Reduce oven temperature to 180°C/160°C fan-forced. Roast lamb, basting with pan juices every 20 minutes, for 1 hour 15 minutes for medium or until cooked to your liking. Add potatoes to pan for last 40 minutes, turning halfway through cooking.
- Remove lamb from oven. Cover loosely with foil. Stand for 10 minutes. Carve. Serve with potatoes
